Rainbow Lemon Fruit Freeze

Ingredients:

  • 3 strawberries, cut into chunks
  • 1 apricot, cut into small chunks
  • 1 nectarine, cut into small chunks
  • 1 kiwi, cut into small chunks
  • 1/4 cup blueberries
  • 6 purple grapes, cut into chunks
  • 1 lemon
  • sugar substitute
  • 1 cup of water
  • 6 popsicle molds
Directions:

  1. Wash and cut the fruit, except the lemon. Set aside. 
  2. Make the lemonade by squeezing the juice from the lemon, and adding sugar substitute and water.
  3. Layer the fruit inside the popsicle molds.
  4. Top with lemonade and place in the freezer for about 2 hours.
